How to cook your carrots
Now that the snow has gone and the carrots are no longer needed by the snowmen, here’s a recipe suggestion for Omi Houriya, a delicious Tunisian carrot dish a bit like carrot Hummus. Thanks to Chas, one of our workshare members for sharing this with us.
The only unusual ingredient is harissa, which is a chilli paste widely available in supermarkets nowadays.
300 g Carrots
1 1/2 tsp ground cumin
2 tsp harissa
1 1/2 tsp white wine vinegar
Juice of 1 lime
1 1/2 tsp honey
5 tbsp extra virgin olive oil
Salt and pepper
Clean and cut the carrots into chunks and boil or steam until tender.
Drain and puree in a food processor with all the other ingredients.
Adjust the seasoning to taste and allow to cool.
Use as you would a hummus – i.e. as a dip or spread, adding a drizzle of olive oil when serving.
